An imaginative and exquisite-tasting cocktail, laced with intrigue. The beguiling blend of golden rum, lightly spiced coffee and a suggestion of sweetness evokes the exotic provenance of Phraya.

50ml / 2oz Phraya
50ml / 2oz Fresh espresso coffee infused with cardamom
15ml / ½oz 'Runny' honey
25ml / 1oz Water
To prepare, take the fresh coffee and keep warm in a pan with crushed green cardamom pods for 8 minutes (5 pods per 50ml / 2oz). Start with a little more coffee than you want to allow for some evaporation.
Strain out the pods and stir in the honey. Then add this along with the Phraya and water to a cocktail shaker. Shake and fine strain into an 8oz cocktail glass. Garnish with 3 whole cardamom pods.
